I can't remember where I read these stories -- if I could, I'd probably be able to find them again! -- although the first is probably on one of the usual SS/HG sites. Both of these stories have been around for at least one or two years -- probably longer, since neither one is to my recollection compliant with HBP.
I think the SS/HG story might be posted somewhere on AdultFanFiction, but I haven't managed to find it yet. It includes a back story in which an American witch who was invited to teach at Hogwarts married and had a child with Severus following a (somewhat improbable) whirlwind courtship. However, she dies before the story starts -- I'm fairly certain that this is a post-Voldemort fic and that she died during the Final Battle. Severus's child is a little girl, not much more than a toddler, and Hermione often helps Severus take care of her -- with the result that Severus finds himself falling in love with her. Both of them feel a little guilty about their attraction to each other because both of them have fond memories of Severus's wife -- but it turns out that Hermione and Severus's wife were twins in spirit, which explains why Severus is attracted to Hermione as well as why she was so fond of his wife when she was a teacher and why their daughter thinks of Hermione as another mother.
I know that the second story sounds a lot like the story "Soroche" recently posted on The Petulant Poetess, but it's definitely not the same even though the OFCs are somewhat similar in that they both come from Spanish-speaking countries. I can't remember for certain whether the OFC in this case comes to Hogwarts from Spain or from South America -- in any case, unlike the heroine of "Soroche", she's Latina or Hispanic instead of coming from Incan descent. Like "Soroche", this is not a post-Voldemort fic and the OFC becomes pregnant with Severus's child but the Final Battle starts before she can tell him about it. I think the OFC's name might be Mercedes, but I'm not certain of that.
